Samar Chahayed is a registered dietitian nutritionist in Metro Detroit. She teaches nutrition in the language of the kitchen — English or Arabic — without asking people to become someone else at dinner.

The story

A Damascene table, a Michigan clinic.

Samar Chahayed — سمر شحيّد — carries two kitchens at once. One is Damascene: olive oil as a given, rice at the center of the plate, yogurt and herbs on everything that will hold them, fruit after dinner, coffee that is allowed to take an hour. The other is Michigan clinical training: assessment, evidence, labs, and the discipline of not promising what food cannot do.

She holds a Bachelor of Science in Nutrition, Dietetics, and Food Science and a Master of Science in Human Nutrition from Eastern Michigan University. She completed her dietetic internship at Detroit Medical Center. She is a Registered Dietitian Nutritionist (RD / RDN) and a Dietetic Technician, Registered (DTR).

The work she chose sits in a very specific American gap. Metro Detroit holds one of the largest Arab communities in the country. The food is excellent. The nutrition advice in English often is not written for it. The nutrition advice in Arabic, online, is too often fear, a supplement, or a diet that lasts two weeks. Samar translates in both directions: science into the language of the table, and the table into eating a Michigan clinic would recognize as sound.

She practices from Fraser, Clinton Township, and Madison Heights, and she teaches in public on Instagram because that is where families already ask their questions. The through-line is the same in a session and in a caption: simple science, familiar Middle Eastern flavors, no crash diets.
